Keyword chicken, lunch, rotisserie chicken
- 1 cup shredded rotisserie chicken
- 1 stalk celery (diced)
- 1/2 of a red onion (diced small)
- 2 Tbsp. low fat mayo
- Juice of 1/2 lemon
- 1/2 Tbsp. garlic powder
- Dash of black pepper
- 1 cup of mixed salad greens
Place all ingredients in a bowl (except salad greens), toss to combine.
Place salad greens in a bowl and top with the mixture. You can use extra celery stalks and carrots for an extra serving of veggies!
