Looking for an affordable, healthy lunch that can be ready in just a few minutes? This lightened-up cheesy tuna melt is perfect for your busy workweek or a day of working from home. This can be made in the oven or in the microwave for even more convenience.
Preheat oven to 400°F. Set aside a small baking sheet.
To a small bowl, add Greek yogurt, mayo, Dijon mustard, lemon juice, salt and pepper. Mix well to combine.
Add tuna, celery, red onion and green onions to the bowl. Stir to combine.
Place your bread slices on the baking sheet and toast in the preheated oven for 2 minutes.
Remove from oven and top two slices of bread with the tuna salad mix. Layer on sliced tomatoes and shredded cheese.
Place back in oven and turn the oven to broil. Broil for 1-2 minutes, until cheese has melted, watching to prevent burning.
Remove from oven and add greens on top of melted cheese. Top each tuna melt with a slice of bread. Enjoy!

This can be made in the microwave — just toast the bread in a toaster oven prior to assembling. Add the tuna salad, tomato slices and shredded cheese to a toasted slice of bread and place on a microwave-safe plate. Heat in the microwave for 60-90 seconds, watching closely, until cheese has melted.
