Cheesy Tuna Melt

Looking for an affordable, healthy lunch that can be ready in just a few minutes? This lightened-up cheesy tuna melt is perfect for your busy workweek or a day of working from home. This can be made in the oven or in the microwave for even more convenience.

Ingredients

  • 1/4 cup plain Greek yogurt
  • 2 Tbsp. reduced fat mayo
  • 1 tsp. Dijon mustard
  • 2 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 5- oz. can tuna (drained)
  • 1 celery rib (minced)
  • 2 Tbsp. red onion (minced)
  • 1 green onion (chopped)
  • 4 slices thick whole grain bread
  • 1 tomato (sliced)
  • 1/3 cup low fat shredded cheese
  • 1/2 cup chopped lettuce or arugula

Instructions

  • Preheat oven to 400°F. Set aside a small baking sheet.
  • To a small bowl, add Greek yogurt, mayo, Dijon mustard, lemon juice, salt and pepper. Mix well to combine.
  • Add tuna, celery, red onion and green onions to the bowl. Stir to combine.
  • Place your bread slices on the baking sheet and toast in the preheated oven for 2 minutes.
  • Remove from oven and top two slices of bread with the tuna salad mix. Layer on sliced tomatoes and shredded cheese.
  • Place back in oven and turn the oven to broil. Broil for 1-2 minutes, until cheese has melted, watching to prevent burning.
  • Remove from oven and add greens on top of melted cheese. Top each tuna melt with a slice of bread. Enjoy!

Notes

  • This can be made in the microwave — just toast the bread in a toaster oven prior to assembling. Add the tuna salad, tomato slices and shredded cheese to a toasted slice of bread and place on a microwave-safe plate. Heat in the microwave for 60-90 seconds, watching closely, until cheese has melted.  
  • This recipe is best if enjoyed immediately.
