Breakfast Sausage Balls

These breakfast meatballs are a wonderful make-ahead option for busy work or school weeks. They’re kid-friendly, easy on the go and perfect for feeding a crowd. Pair them with a side of fresh fruit and scrambled eggs for a deliciously balanced breakfast.

Ingredients

  • ½ cup all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 lb. ground turkey breakfast sausage
  • 1 egg
  • ½ cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F and line a large rimmed sheet pan with parchment paper.
  • Add the flour, baking powder and salt to a large mixing bowl and combine.
  • Add sausage and egg to the bowl. Using clean hands, mix ingredients until well combined.
  • Add in the shredded cheese, and continue mixing until the cheese is incorporated well.
  • Roll the mixture into 1½” balls and place on prepared baking sheet.
  • Bake for 14-15 minutes, until meat is cooked through and the meatballs are starting to brown on the top.
  • Remove from oven, let cool and enjoy!

Notes

  • If you can’t find ground turkey breakfast sausage, sub your favorite ground meat. The “breakfast sausage” variety adds flavor, though, so be sure to add some dried herbs or seasoning if using a plain version.
  • These can be frozen and enjoyed later. Thaw before reheating.
