Ingredients

can chickpeas
Juice of 1/2 lemon plus 1-2 tsp. zest

hummus or light mayonnaise

small-diced celery
1/2

small-diced red onion

garlic powder

tsp.
salt

tsp.
ground black pepper

lettuce leaves
(for serving)
Dash of cayenne
(optional)

cup
sweet or dill pickle relish
(optional)
Instructions
Drain and rinse chickpeas, place in medium-sized bowl and mash the chickpeas with the back of a fork until they reach your desired consistency.
Add remaining ingredients and mix well.
Divide evenly among lettuce leaves to make lettuce wraps and serve.

Substitute whole grain bread for lettuce leaves and top with tomatoes and cucumbers to make sandwiches.
