Ingredients

canola oil

packed light brown sugar

sugar

eggs

creamy peanut butter

low fat milk of choice

vanilla extract

baking soda

all-purpose flour

cup
ground flax seed

rolled oats

salt

semi-sweet chocolate chips
Instructions
Preheat oven to 350°F. Line two sheet pans with parchment paper.
In a medium mixing bowl, combine oil and sugar. Mix well.
Add eggs, peanut butter, milk and vanilla. Mix again.
Mix in baking soda, flax, oats and salt.
Fold in chocolate chips.
Scoop out 3 Tbsp. of dough per cookie and place on lined baking sheets.
Bake for 15 minutes or until edges of cookies are golden.
Allow to cool completely.

For an extra bit of protein and crunch, add chopped walnuts to the dough.
