BBQ Pulled Chicken Sliders & Green Beans

Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 whole wheat slider mini buns
  • 8 bread and butter pickles
  • 1/2 cup BBQ sauce
  • 2 cups of water
  • 1 1/2 lb. green beans (trimmed)
  • 1 1/2 Tbsp. olive oil
  • 1 1/2 Tbsp. butter
  • 1 garlic clove (minced)
  • 2 Tbsp. lemon juice
  • Dash of salt
  • Dash of pepper

Instructions

BBQ Pulled Chicken Sliders

  • Combine chicken and BBQ sauce in a small bowl.
  • Spoon 3 Tbsp. of the chicken mixture on the bottom half of each bun. Top each with a few pickle chips and top with bun.

Green Beans

  • Boil water in a large skillet. Add the beans, cover and simmer on low heat for about 8 minutes. Drain beans and pat dry.
  • Heat oil and butter in pan. Add garlic and sauté for 30 seconds.
  • Add beans, lemon juice, salt, and pepper. Cook for 2 minutes (or until hot).
  • Serve!
